Strawberry Parfait Recipe

Looking for perfect mixture of sweet and cream? Our Strawberry Parfaits are just the perfect combo of both and simple to create. These delicious parfaits are made with strawberry poke cake. For the super busy, you could skip a step and just make them with golden or strawberry cake instead.  The homemade whipped cream is really the star of the show here {so no substitutions}!

Strawberry Poke Cake Ingredients:

  • 1 (18.25 oz) box yellow cake mix, prepared per box instructions
  • 1 (3oz) box Strawberry gelatin mix
  • 1 cup boiling water

Directions:

  1. Prepare the cake mix according to the directions on the box and bake in a 9×13 pan.  Cool completely.
  2. Using a fork, poke holes all over the cake.
  3. In a small bowl, combine the boiling water with the gelatin mix and stir until dissolved.
  4. Pour the gelatin over the cake slowly allowing it to fill the holes in the cake.
  5. Refrigerate while you prepare the whipped cream.

Homemade Whipped Cream

  • 2 tablespoons sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

  1. While the cake cools, place a metal mixing bowl and your beaters in the freezer.
  2. Remove and add the sugar, vanilla, and cream to the bowl.
  3. With your mixer on low, beat the cream until it thickens and you have stiff peaks.

To Assemble:

  1. Cut the cake into bite size pieces.
  2. Start with a layer of the whipped cream (with the amount depending on the side of your glasses/bowls).
  3. Add some of the cake.
  4. Top with whipped cream and fresh strawberries.
  5. Repeat with remaining dishes.
  6. Store in the refrigerator and serve cold.
