Easy Chocolate Cake with Peanut Butter Dream Icing Recipe

Easy Chocolate Cake

  • 1 3/4 cups cake flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 2 cups white sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup canola oil
  • 1 tablespoon vanilla extract
  • 1 cup hot water

Preheat oven to 350 degrees. Spray pan with non-stick baking cooking spray (or grease + flour) two 9-inch round pans.

Sift together cake flour, baking powder, baking soda and salt into a large bowl. Then mix in sugar and cocoa powder by method of stirring gently.

In a separate bowl beat eggs, milk, oil and vanilla for 1 minutes on low speed with a mixer. Then add fold in liquid mixture to dry.

Mix in hot water to cake mix using mixure 30 second on low speed and 2 minutes on medium.

Pour evenly into the prepared pans and bake for 25 to 30 minutes in the preheated oven, until the cake tests done with a toothpick.

Cool for 10 minutes in pans before removing to wire rack to cool completely.

 

Peanut Butter Dream Icing

1/2 cup butter (softened)
1 cup creamy peanut butter
4 tablespoons milk
2 cups confectioners sugar

Combine softened butter and peanut butter into mixing bowl by beating with a mixer till creamed (right at 1 minute). Gradually mix in the sugar 1/2 cup at a time and milk 1 tbsp at a time. Beat mixuture for 3 minutes or until a nice spreadable thickness.

 

TIP – Cut the top of the first cake layer off for a more even look.
