Banana Lime Cake Recipe

Summer is officially here and to celebrate, I want to share one of my favorite desserts, Banana Lime Cake. Marriage of amazing flavors, perfect for your next summer get-together.

Banana Lime Cake

Dry Ingredients

  • 3 cups flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Wet Ingredients

  • 1 cups sugar
  • 1 cup oil
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • zest of one lime and 1 tablespoon lime juice
  • 3 cups mashed bananas
  • 1 cup pecans chopped

Banana Lime Cake Process

Directions:

  1. Pre-heat over to 350.
  2. Grease cake 13×9 cake pan with Baking Spray or Oil with a Flour Dusting
  3. In a large bowl cream the sugar, oil, eggs and milk till well blended.
  4. Add in the vanilla, lime, bananas and nuts.
  5. In another bowl combine your dry ingredients together.
  6. Add in wet ingredients one cup at a time.
  7. Mix for 2 minutes on medium speed.
  8. Spread batter into a greased sheet pan.
  9. Bake at 350 for 25-30 minutes till toothpick comes out clean.
  10. Allow to cool, then frost.

Banana Lime Cake Icing

Lime Frosting Recipe

Ingredients

  • 4 oz cream cheese softened
  • 2 cups powdered sugar
  • 1/2 tablespoon lime zest
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla

Directions:

  1. Cream the cream cheese and sugar together.
  2. Add vanilla and lime and mix well.
  3. Add milk till desired consistency is achieved.
